Chicken Paneer Reshmi Handi – Kolachi Style

Cooking for people I love brings me so much joy, even if it’s the simplest and the easiest thing. Made this Paneer Reshmi Handi and trust me you guys, this is the easiest recipe to put up and so scrumptious, your guests would lick their plates clean. It’s a fool-proof Kolachi style recipe which I adapted from Karachi Chefs at Home! (posting it here incase you’re not a part of that group)

Ingredients:  

1kg Boneless Chicken (julienne cut) 

1½ cup Oil 

1 tsp Ginger Garlic Paste 

1 sliced Capsicum 

1 sliced Onion 

2 tbsp Cheddar Cheese 

2 cup Cream (tetra pack) 

4 Cream Cheese Triangles (1 for garnish) 

4 tbsp Milk 

2 tbsp Chicken Powder 

1 tsp White Pepper 

1 tsp All spice powder (garam masala) 

Method: 

  • Heat 1 cup oil in a pan 
  • Fry the boneless chicken for 5-8 minutes 
  • Separate Chicken from the oil 
  • In a saucepan/handi, heat up ½ cup oil, add ginger garlic paste, onions and capsicum and fry for a minute. 
  • Then, add chicken, cheddar cheese and cream and cook. 
  • Lastly, add three cream cheese triangles, milk, salt, chicken powder, white pepper and all spice powder. 
  • Give it a good stir for 2 minutes and turn off the flame, 
  • Garnish with the last cream cheese triangle and serve! 

I promise you won’t have to visit Kolachi for this! 😉
